My wife made one for lunch Sunday and it was fine , I ate 3/4 of myself , thanks for the recipe .

i doubled the recipe and used 3/4 cup of sour cream and 1 1/4 mayo (wife isn't a big mayo fan, so the sour cream keeps the velvety texture and adds a lil different "twang" to it).
i told biggie that i had an epiphany the other morning while cooking biscuits....use same ingredients and baking times for a large thick slice of tomato on a big ole country biscuit half for individual "pies"....i'll report back.....

bet if you throw some bacon in that sucker you'd be able to sell them for a living.
I don't eat tomatoes but will try this recipe and even make one with bacon to see how
adding a little crunch to it will work out.

Oh and we used cheddar and pepperjack since we didn't have enough Reggiano Parm to fit the bill.

We've been crumbling 4 pieces of bacon on the top , made another one Saturday ,I can't get enough .
