Crawfish Recipes

Ok. Guy that normally cooks ours can either get them screaming hot, or bland. Cooking out of a 120qt pot, 1-2 sacks each batch, waht do yall reccomend as far as seasonings and amounts?

Season them after you have cooked them and they are in a cooler or in something else to steam
Add seasoning then
Coat it left to right
Mix the bugs
Coat again right to left
Mix the bugs
Coat again and let sit for 30 minutes to and hour
The longer you wait the hotter they get

Only thing you get do in the pot is add more crawfish liquid boil
Comes in a gallon and if you use about half of it in a 120 pot they will light your ass up

Remember cook them and let them steam for an hour

Get seasoning from tbeaux's in clinton. Bring water to a boil. Cook em till they float. THen soak them till they sink. Easy as can be.

Slap Ya Mamma seasoning ifin ya want em HOT. A little bit will go a long way. Shake it on em after cookin.

Add the seasoning you like, or can get... Use about double what you think should be enough for the first batch, then a third of that for the second.

Puttin seasoning on them after cooking makes the shell hot, not the meat..... I like the flavor in the stuff I eat personally not all over my hands and mouth. Shells don't eat that well.

For 120qt pot, I do the following:

1 large bag of Louisiana Seasoning and half a small bag
8 lemons cut in half and squezed into pot
2 large oranges cut in half and squeezed into pot
1 bunch of celery
4 garlic peeled
2 onions cut in half
half a box of salt

When water comes to a rolling boil, place crawfish in and bring to a boil. I let mine boil for 2-3 minutes maybe. Shut off heat, add a bag of ice and a small bottle of Louisiana liquid and stir for several minutes. I occasionally stir until they all fall to bottom or 45 minutes soak time.

I DO NOT SPRINKLE WITH SEASONING AFTER THEY ARE BOILED!

I cooked some last Friday and added broccoli heads. I almost like them better than the mushrooms. They really soak up some heat too.

Where in Madison , Ridgeland , Jackson area can I buy a 120 qt pot and basket? I need a larger pot than the one I've been using. Thanks

Duane's is a good dry seasoning according to the "Crayfish Alley" cooks from Tunica!

It is amazing the various ways people boil crawfish. I was floored the first crawfish boil I went to and the cook broke out bags of ice and started putting ice in the pot.


Cooking for a bunch of people is most difficult because you cannot please everyone. I personally like SOME seasoning on the outside as it allows you go get more by licking your fingers if you want more. I like using crab boil and salt for liquid seasoning and then add some seasoning while they are sitting in the cooler to finish cooking. 3 minutes boiling in the pot and 2 minutes sitting in the cooler for me.

I just cooked some from there 2 weeks ago and they sold me their seasonings and told me how to do it they turned out great. The only thing I did different was after my last pot was soaking I added more seasonings because I knew they were not going to soak long. I would suggest buying your crawfish there also mine was very clean and very few dead.
