What do I need to have in my possession to hunt the early Canada season? I have heard that some Canadas were using a dove field that I may hunt. I know steel shot would be required, but wondered what would happen if I had lead and steel in possession. Also what kind of stamps? What are the exact dates of the season?

Forget about the steel/lead thing for a minute. there may be 'baiting' issues involved, depending on what kind of field it is and , more importantly, how it was 'prepared'.
If it's a corn field, harvested under a 'normal agricultural process', then it's O.K. to shoot geese in it.....however, if it's one of those wheat fields (supposedly intended for 'grazing'), forget it. According to the baiting regulations, you can't shoot dem gooses over dat. I assume you've already considered this, but thought I oughta mention it.
I'll let someone else address the steel/lead thing. That's a good question.

h2o Dog, every situation that I am aware of that involved a waterfowl hunter being in possession of lead ammo resulted in that hunter being cited and fined. I would do the goose hunting on alternate days to stay in the clear. Better safe than sorry.....

by chance
I know a feller once that got his ammo checked as he was coming off the Tallahatchie river between Grenada and Greenwood. He had one duck in the boat. He also had steel and lead shot in his possesion. Duck was kilt with steel. Little magnet deal picked it up. He got himself a ticket for having the lead shot in his possesion. Ole game warden felt that possesion indicated intent. Sticky kinda situation.
