If your going with the 243. The best bullet for all categories is the BTHP (Boat Tailed Hollow Point)

Muzzle Vel - 3320
That tops teh 2506 and 7MM08. Now you won't get an exit wound with this, but you won't need one. That bullet turns to shrapnel on entry and slices all the organs.. No deer I hit has run more than 10 steps with this bullet.
